Recipe: Adobong Manok - Chicken Casserole

Serves about 6

Considered to be the Filipinos national dish, this Spanish influenced dish is simple to prepare.

4 tablespoons cooking oil
1 chicken, about 4 pounds, cut into serving pieces
1 head garlic, peeled and crushed
1/2 cup vinegar
5 tablespoons soy sauce
1 1/2 teaspoons pepper
6 bay leaves
1/4 cup water

Heat oil in a saucepan, then fry chicken and garlic over medium low/heat for 10 minutes, turning chicken pieces over once. Add remaining ingredients and bring to boil, then cover and cook over medium/low heat for 40 minutes or until chicken is well done, turning over chicken pieces once. Serve chicken pieces with sauce and accompanied by cooked rice.
